Beef Pares
Pares( pronounced : Pah-ress) also known as beef pares, is a term for serving of Filipino braised beef stew with garlic fried rice and a bowl of clear soup. It is popular food particularly associated with specialty roadside diner style establishments known as paresan( Pares house). In recent years, it had also become common dish served in small eateries called Karinderyas or carinderias that serve economical meals for locals.
Ingredients:
2 to 3 tbsp of sunflower oil or any vegetable oil
1 garlic head (mince)
1 onion chopped coarsely
3 slice of ginger
1 to 2 tbs of sugar
1tsp of 5 spices
3tbps. Soy sauce
2tbps of oyster sauce
1tsp of ground black pepper
Scallions /spring onion chopped coarsely
2tbsp of cornstarch
2 to 3 bayleaves
2 to 3 star anise
600g to 700g of beef.
Procedure:
Heat oil in a cooking pot or pressure cooker. Saute onion, garlic, and ginger.
Add the beef once onion softens. Cook until light brown.
Pour soy sauce, oyster sauce and water. Stir.
Add bay leaves and star anise. Cover the pressure cooker and pressure cook for 15 minutes.
Add brown sugar and season with salt and ground black pepper. Cook for 8 to 10 minutes more or until the sauce reduces a bit. then add the water with corn starch to ticken the sauce.
Top with chopped scallions and serve with sinangag and beef stock. Share and enjoy.
