Halloumi salad
This Mediterranean grilled halloumi salad is easy to make with pan-grilled halloumi cheese, fresh veggies and herbs, and a zippy lemon dressing. Feel free to add in chicken or shrimp if you’d like, too!
Ingredients :
12 oz of Halloumi cheese slice d 1/2 inch thick.
Half cup of chick peas
One small red onion slice coarsely
2 tomato slice coarsely
1 small cucumber slice coarsely
Half of Lettuces coarsely chopped
1 tbp of olive oil for grilling the halloumi.
For the vinaigrettes:
1 tsp of Za’atar spices
2 to 3 tbps of lemon
2 to 3 tbps of olive oil
8 to 10 leaves of mint chopped and 4 for leaves for garnishing
1 tsp of honey (optional) it’s just to balance the acidity of the lemon.
1 garlic minced
Salt and pepper to taste.
Procedure :
Step one
Whisk vinegar, lemon juice, za’atar, salt, pepper, honey and garlic in a large bowl. Whisk in 3 tablespoons of olive oil.
Step two
Heat a cast-iron skillet over high. Add remaining 1 tablespoon oil and swirl to coat. Working in batches, add cheese in a single layer and cook, flipping once, until browned, about 30 seconds per side.
Step three
Add romaine, chickpeas, cucumber, onion, and tomato to the dressing and toss to combine. Divide among plates and top with cheese.
